Core Methods

The Shake

Used for cocktails with citrus, egg whites, or cream, a vigorous shake aerates the drink, creating a cloudy, frothy appearance and a crisp, cold mouthfeel. Shaking is about texture and temperature, not just mixing.

Steps

  1. 01Fill shaker with ice
  2. 02Add ingredients in order (spirit last)
  3. 03Seal tightly
  4. 04Shake vigorously 10–15 seconds
  5. 05Double-strain immediately

The Stir

Stirring is the technique of choice for spirit-forward cocktails like the Martini or Manhattan. The goal is to chill and dilute the drink without aerating it, maintaining a silky, crystal-clear texture.

Steps

  1. 01Combine ingredients in mixing glass
  2. 02Add ice to fill three-quarters
  3. 03Stir smoothly for 30–45 seconds

  5. 05Express citrus peel if required

The Muddle

Muddling extracts fresh flavours from fruits, herbs, and spices. A delicate touch is essential — bruising mint too hard releases bitter tannins, while citrus peels need firm pressure to release essential oils.
