What goes with Baileys?

Coffee is the obvious one, and the best, because it does the job of milk and sugar in one pour. Hot chocolate comes next, and Kahlúa is its best liqueur partner, as in a B-52 or a Mudslide. Keep it away from lime, lemon and tonic, because acid curdles the cream.

What does it taste like?

Sweet cream, milk chocolate and vanilla with a soft whiskey warmth at the end. Think melted ice cream that's had a nip.

Which bottle should I buy?

Baileys Original is the default. Carolans is the common alternative, and supermarket Irish creams are the budget option.

Goes well with

An Irish cream liqueur from Ireland, made with Irish whiskey, cream and cocoa. It's 17% ABV. Another Irish cream is the direct swap, or use a splash of Irish whiskey with sweetened cream and a little cocoa.

Questions

What do you mix Baileys with?

Coffee, hot chocolate and Kahlúa are the safest bets. It's also good over ice or poured on vanilla ice cream. Avoid sharp citrus, which curdles it.

Does Baileys need to be refrigerated?

It doesn't have to be, but the fridge is the safe bet once opened. Alcohol and sugar help preserve it, but keep it cool and out of the sun either way. Follow the best-before date on the bottle, and bin it if it looks or smells off.

Why does Baileys curdle?

Because it contains cream, and cream splits when it meets acid or high heat. Let very hot coffee cool for a moment, and keep it away from lemon, lime and tonic.
